- 1 1/2 cups Greek yogurt
- 1 cup ricotta cheese
- 1/4 cup powdered sugar
- 1 teaspoon vanilla or almond extract
- 2 cups mixed berries, (try strawberries, raspberries, blueberries, or blackberries)
- 1/2 cup biscotti cookies, crushed
Step 1In a bowl, combine yogurt, ricotta, sugar and extract; mix well.
Step 2In four wine or parfait style glasses, layer 1/4 cup yogurt mixture, 1/4 cup berries and 2 tbsp biscotti crumbs. Repeat layer. Repeat with remaining glasses. Top each parfait with 1 tbsp yogurt mixture and refrigerate until ready to serve.
